Who doesn’t love ice cream?? The Tiger center in front of DSMS on HWY 290 continues to have amazing new businesses opening in it bringing new and exciting offerings to the WEST SIDE of Drip! I know that I will be a frequent shopper at this amazing new ice cream shop with a gorgeous aesthetic! Check out Scout and Honor, which is hoping to open soon (maybe tomorrow!! I was excited to meet the owner, Kate, there this morning and get a tour of the place before it opens!

Hey Kate! Tell us about Scout and Honor…
Scout & Honor is a nostalgic, slightly adventurous twist on the classic ice cream shop—rooted in clean, better-for-you ingredients. We’re 100% gluten free, use organic milks, are soy- and peanut-free, and only use natural colors. Everything is thoughtfully sourced and made to taste as good as it feels. The name was inspired by our family dog, Scout, and the timeless idea of living with honor—especially when it comes to what we feed our families.

Have you always wanted to have an ice cream shop? Where did you get the inspiration for this concept?
This idea has been quietly simmering for years. As a mom and a longtime healthy restaurant owner, I’ve always wished there was a place I could take my kids (and myself!) for a treat without the aftermath—no weird dyes, and no allergens. The inspiration came from that gap… and from my love of design, nostalgia, and creating spaces that feel both fun and elevated.

Why are dye free, gluten free, and organic offerings important to you?
Because ingredients matter. I’ve seen firsthand how certain additives, dyes, and inflammatory ingredients can affect everything from mood to digestion. I’ve lived it as a mom, and I’ve seen it in the wellness space for years. I wanted to prove you could still indulge in something delicious and joyful without compromising your values or your health.

Where did you get the ideas for the flavors?
Some came from childhood favorites, some from our travels, and some were inspired by nostalgic desserts reimagined—like our gluten-free cookie sandwiches or our S’more-Licious gelato. We also let the seasons and local farms guide us. Our flavors are playful, familiar, and made with real and many organically sourced ingredients.

What is the most interesting thing that you serve?
That might be our campfire kits—a Scout & Honor twist on s’mores. They come with everything you need to build your own fireside dessert. Or maybe our honor badge system, where kids can earn fun badges for trying new flavors or upholding our shop values. It’s ice cream with a little heart behind it.

What do you hope to create within the community of Dripping Springs for Scout and Honor?
A place where people feel good—about what they’re eating, how they’re treated, and the experience as a whole. We want to be that go-to neighborhood spot for families, date nights, after-school hangs, and out-of-town guests. It’s not just about dessert—it’s about creating memories.

When will you be open?
We’re aiming for the last week of May and we’ll announce the official date soon!
