Tell us about Swig Cheese Haus…
We are an artisan food trailer implementing an easy concept refrigeration option for wineries, air b n b’s, and any tasting rooms.
What do you serve and when/where are you open?
Artisan foods from international and local purveyors. Grab n go items to build your own picnic and pre ordered charcuterie boards.
What sparked your love for wine and cheese?
The education involved and the etiquette that comes with it.
Favorite cheese?
Vegan or aged cheese. Consumption of cheese for me is technical.
What are the most beautiful wineries in Dripping Springs?
Why did you decide to take over the Wine and Food festival?
I wanted to make sure that our community experience wine and food the way it should be. Having respect for the local wine makers and artisan purveyors in the area while paying homage to the farming side and acknowledging that the wine country starts with Dripping Springs. We are the gateway.
Tell us more about the Wine Food Fete!
It’s a collaboration of local wineries and food artisans and people in the wine and food industry as well as consumers. Our initiative is to focus on the education side of it, providing resources to community for certification and implementing books into our local library for at home study.
If you could spend a weekend in this area doing whatever you wanted, what would you do and where would you go?
I would honestly go Glamping at Cactus Moon, Breakfast at Alchemy, have brunch at Tillies, listen to music at Desert Door, coffee at Mazama, book a wine tasting experience and go to a festival, and Dinner prepared by a chef or Epicure.
What do you love about running a small business in Dripping Springs?
The community support and the opportunity to create an option in the community that people love.
