Two weeks ago I walked into the Dripping Springs Chamber of Commerce and I was greeted by a stranger with “LAUREN CLARK of LAUREN LOVES DRIPPING SPRINGS!”
I must admit…I felt like a little bit of a celebrity in that moment in that small-town Chamber of Commerce building. We all need our moment of glory, right? Ha!
That was my first introduction to Hope Boatright with Destination Dripping Springs. I didn’t leave that office before deciding we needed to meet up for lunch and talk about everything Dripping Springs related! A week later we ended up at lunch at the Texas Hill Country Olive Company on West Fitzhugh.
Only a 15 minute drive from downtown Drip, this unique business has an olive orchard, a gift store where they sell their unique blends of Texas Olive Oil and a delicious bistro.
When I go to new places I always ask the waiter what they recommend and then I choose that (or sometimes I just tell them to surprise me!). They recommended the grilled cheese and tomato soup and boy oh boy am I glad I got it! That was the BEST grilled cheese (with grilled parmesan crust on the outside) that I’ve ever had.
That soup was glorious also.
The bistro is open daily from 10 AM- 3:30 PM and no reservations are needed.
Sadly, the snowpocalypse freeze that crushed central Texas earlier this year killed their entire orchard and so the trees that they have planted beside their building won’t produce for several years, but not to worry, they have other orchards that they use to harvest their own olives in locations across Texas that made it through.
