I first heard of this fun restaurant through Dripping Springs Lifestyle magazine. Becky and her husband were featured and ya’ll know that I love trying new places that come to this town! Well when they began serving lunch and dinner instead of just being a wine tasting room, I knew I had to give it a try!

Susan Labelle and I hosted our first Dripping Women Entrepreneur group here and the sandwiches were amazing! Becky uses fresh ingredients and Abby Jane Bakeshop bread. I’ve had their grilled cheese and their chicken salad and it is so fresh and delicious! They are open from 12-7 daily.

The husband and wife team of Ian and Becky Atkins bring their years of experience and passion to every aspect of their business, and their commitment to sustainability and minimal intervention techniques make them stand out in the crowded wine industry.

Let’s hear a little bit from Becky!

Tell us more about yourself… How did you get into the wine making business?

My husband Ian (co-owner and winemaker) and I both grew up in Texas and met in Austin our senior year of college.  Ian started his military career just after graduation and I followed him to his first post at Fort Bliss in El Paso Texas.  When Ian was just 22 and I was 24, Ian’s was deployed to Iraq.  While Ian was away, I opened our first restaurant, Ripe Eatery with my incredibly talented brother Adam in 2004.  Although there was a steep learning curve, El Paso was a forgiving city and our first restaurant enjoyed quick success.   Over the next four years Ian and I opened two additional full-service restaurants and a food truck.  Although we were not native El Pasoans, it was evident to them that while stationed there we needed to contribute to the current culinary climate and make an impactful contribution to the community.  

Three of our restaurants were soon recognized by The New York Times and credited as recommendations in “36 Hours In El Paso.”

As Ian and I became more educated wine consumers, we naturally grew passionate about the art of wine production; specifically low-intervention wine making.  In 2016, we sold our businesses in El Paso and moved to the Pacific Northwest to immerse ourselves in the wine community.  While living in Portland, we opened two counter service restaurants called Stella Taco.

In 2018 we opened an urban winery, Way Down Wines, and began producing natural wines with grapes from partner vineyards in Oregon and Washington State under the label Flat Brim Wines.

What brought you to Dripping Springs

In 2020, we made the heart-wrenching, but ultimately wise decision to close our restaurants in Portland and move back to Texas with our then toddler Olive.  We knew we wanted to be a part of the exciting growth of the young Texas wine industry and help build a space for natural wines in the region. 

Dripping Springs is centrally located between Austin and the heart of wine country and the perfect spot to call home.  The move allowed us to expand our wine business and begin building our newest label Summer Revival Wine Co and open a tasting room in the “Gateway to the Hillcountry”.  We began making wine in Fredericksburg in 2021 and opened our Dripping Springs Tasting Room and Restaurant in downtown Drip in the summer of 2022.

What is your favorite item on the menu and favorite wine

I am terrible at answering this question because I genuinely love every item.  My absolute go-to right now (and I have to admit I eat it just about every day) is the Hummus Bowl topped with cured trout and a glass of Sparkling Dry Riesling, its perfection.
